Not an expert, but AFAICT email self hosting is not considered a good idea, as the maintenance of an email server requires a lot of work. An alternative could be using Cloudflare for the DNS and set up email routing (for free).

AdGuard Home comes with a few more goodies vs. pihole. Last but not least, access control, DoT, DoH, custom DNS for selected clients and so on (you need a domain and a certificate for the DoT, DoH, though)
I may also add that if one doesn’t want to host something himself, Hetzner offers quite cheap Nextcloud instances with admin access and thus the possibility to add users/apps.
I think the most straightforward way to collect these info would be to use Cloudflare as the DNS for your domains, which allows for a good deal of analytics.
Cloudflare DNS basically, but it can be implemented at nginx level using geoip2 modules (I do both, because some of my services don’t play well with Cloudflare proxied DNS). The cumbersome part is keeping geoip database up to date but I’m sure there are plenty of tutorials online.

Plus, my instance is proxies through Clouflare and only IPs from my country are allowed.
MIne is on a RPi4 4 GB as well (the AIO container) with two SSD and the performance of the frontend are meh… But I seldom use the web part anyway and mainly rely on the desktop client/android App, which work just fine.
